Puran Poli is an authentic Maharashtrian delicacy. It is a sweet dish made during the festival of Diwali and Holi. It is also called as holige, obbattu, bobatlu in different parts of India

  • Wheat flour (1 cup)
  • Rice flour (1 tbsp)
  • Bengal gram flour/Besan (1 tbsp)
  • Refined flour/ Maida (1 tbsp)
  • Jaggery (1/2 cup)
  • Bengal gram dal (1 cup)
  • Cardamom powder (a pinch)
  • Nutmeg powder (a pinch)
  • Salt (a pinch)


  1. In a bowl, add wheat flour, rice flour, bengal gram flour/besan, refined flour/maida, salt and mix well.
  2. Add little by little water, knead and make a smooth dough.
  3. Cover it with a cloth and allow it to rest for 1 hour.
  4. Boil and cook the Bengal gram dal till it turns tender. Drain the water.
  5. Add jaggery into the dal and blend them in a blender to make a smooth paste.
  6. Heat it in a slow flame for about 7 minutes or heat it in an oven for 5 minutes on high temperature.
  7. Remove it from the flame and add the cardamom, nutmeg powder and mix well.
  8. Keep it aside for 30 minutes till it cools.
  9. Once the mixture cools, it becomes thick in consistency.  This becomes the filling for the dough
  10. Make small balls of the dough and the filling of equal size.
  11. Flatten the dough ball  and place the filling ball inside the dough and seal it.
  12. On a flat surface, dust some wheat flour, and flatten the ball.
  13. Heat a pan and roast the puran poli both sides.

Puran poli is now read to be served with lot of Ghee.
